I have been thinking about what to do with the leftover acid whey from my cheesemaking ( viewtopic.php?f=7&t=1098&start=20#p12290 ) other than adding it to curries or drinking it. I came up with the idea of fermenting it into something roughly kumis-like (see previous page). Compare blaand ( http://www.armchairanglophile.com/delic ... an-blaand/ ).

Such a short fermentation time and minimal additional sugar won't yield the same alcohol content as actual blaand (which can be about 11% apparently), but it's probably worth having a go at fermenting whey and seeing what happens. If it doesn't work out, not that much is lost really.
